Selecting Multiple Categories for a Single Post

Can we not assign more than one categories to a single post?
Let's take my last post Sandpaper Kisses as an example. I successfully created my categories today and now want to assign both "trip hop" and "soundtrack" categories to this post. I can select one category all right but when I move down the category table and select the other, the earlier selection is gone.
I've come across tables like this that used "shift" to select more than one option so I tried that but it only selects consequent categories. Like:
I can select al three but not "Trip Hop" and "Soundtrack" seperately. Hence, the question.
