Parts of post not appearing

Help! Below is the content of my latest post.
However, when posted up on Food the post appears incomplete, with random parts removed. I can't understand why.

Powerful Peanuts

Peanut sitting on a railway track,

* Peanuts have more plant protein than other nuts and legumes. This can be especially useful for vegetarians and others on no-meat diets.

* Peanuts are also rich in vitamin E, folate, potassium, zinc, phytosterols and antioxidants, which are thought to be important to health.

*Peanuts contain fiber and magnesium which decrease insulin resistance Recent research suggests that this may be linked with a reduction of the risk of contracting type 2 diabetes.

* Peanut butter and peanuts contain mainly beneficial monounsaturated fats and polyunsaturated fats and are low in saturated fat. Eating unsaturated fats provides a long, efficient energy release and can therefore be more effective as a part of a weight loss diet than a low fat diet. Unsaturated fats can also help to lower blood cholesterol and by extension reduce the risk of coronary disease.

* Peanuts contain resveratrol which is one of the many phytochemicals found in plant foods. Phytochemicals are associated with many benefits including anti-aging.

* Americans consume approximately 2.4 billion pounds of peanuts each year! About 50% of that is consumed as peanut butter.

*Although usually referred to as a nut, peanuts are not technically nuts. According to botanic terminology the fruit of the peanut is a woody, legume or pod.

* Archaeological evidence reveals that peanuts were cultivated as early as prehistoric times in South America where they were first found.

* Peanut allergies are a serious threat to many people today. An allergic reaction can be triggered by eating peanuts, breathing their dust or even eating foods that have been processed with machines that have previously processed peanuts. This is why many chocolate labels state that the product “May contain traces of nuts”. This exposure can cause fatal a anaphylactic shock.
